Banana Walnut Cake 核桃香蕉蛋糕

I read somewhere that walnuts are good for the brain, retards the aging process and prolongs longevity. No matter whether it is truth or fiction, I just love to eat walnuts.

Bananas are a definite no-no for people who are on diet. Most people believe that they contain high calories. However, I was told by a practitioner of Chinese herbal medicine that bananas are very good for the pancreas and is believed to be able to prevent diabetes. Her advice is of course not backed by scientific research.

One thing  for sure which I can vouched for is bananas and walnuts go very well together. This cake is very delicious indeed!



Ingredients


187g butter
150g sugar
3 eggs
300g super soft flour
1/2 tsp baking powder
1/4 tsp baking soda
1 cup mashed banana (the banana must be fresh and ripe)
1/2 cup chopped walnuts


Instructions


1.  Preheat the oven to 160 degree C. 
2.  Grease a loaf pan and set aside. 
3.  Sift flour, baking powder and baking soda together. 
4.  Next, cream the butter and sugar until light and fluffy. 
5.  Add eggs, one at a time. 
6.  Add sifted flour alternately with banana and walnuts. 
7.  Pour mixture into pan and bake for 30 - 35 minutes.
