Steamed Egg With Dried Scallops 水蒸蛋

 

 

Silky smooth steamed egg

I always prepare this dish when my fridge runs out of fresh market produce, which means there is not much choices in terms of fresh fish, meat or vegetables in my fridge to prepare for our daily meals. This dish uses only eggs and dried scallops. Eggs and dried scallops are among the basic food items which are always in my pantry in anticipation of the so called "rainy day".  Well, rainy day or not, my youngest son just loves this dish.

 

Ingredients


4 eggs
40g dried scallops
1/2 rice bowl of lukewarm water
1/4 tsp salt
1 tbsp shallot oil

Instructions


1.  Soak the dried scallops in water for 2 hours
2.  Shred the soaked scallops into tiny thread-like pieces
3.  Crack the eggs into a medium size bowl
4.  Add in the salt, water and the shredded dried scallops
5.  Beat the egg mixture with a fork
6.  Remove the bubbles on the surface with a spoon
7.  Prepare the steamer and bring the water in the steamer to boiling point
8.  Place the bowl of beaten egg mixture into the steamer with boiling water
9.  Reduce the fire to very low
10.  Steam for 25 to 30 minutes over very low flame or until the egg has set completely
11. Use a spoon to dig into the centre of the bowl to see the inside to check if it is done. If it is watery, it is not ready. If dry, then it is cooked.
12. Garnish with chopped spring onion
