Salt Fish-Flavoured Fried Chicken 咸鱼炸鸡

SK and I first tasted this fried chicken at a small eatery in Telok Panglima Garang which is a small town along the Klang-Banting trunk road in Selangor, Malaysia.  We found this dish very special as the batter contains salt fish. In fact the aroma from frying the chicken floated around the whole restaurant when the chef fried the chicken pieces. I blogged about this outlet a few weeks ago. Ingredients


600g free-range chicken, chopped into bite-sized pieces
50g salt fish
500ml oil for deep frying



Batter


3 tbsp plain flour
3 tbsp tapioca flour
3 tbsp rice flour
120ml water 


 Raw salt fish

 Deep-fried salt fish

 The pestle and mortar to pound the deep-fried salt fish


Instructions


1.  Deep-fry the salt fish till light brown.
2.  Use a pestle and mortar to pound the salt fish into a fine powdery form or use a food processor to grind the salt fish.
3.  Mix the ground salt fish into the batter ingredients and stir well to mix evenly to form a smooth batter.
4.  Heat oil in a wok.
5.  Mix the chicken pieces with the batter and deep-fry until golden brown.
6.  Use kitchen towels to absorb excess oil.
7.  Arrange on a plate and ready to serve.

Clay-Pot Chicken and Salted Fish Rice 瓦煲咸鱼鸡饭

 






Ingredients


350g chicken drumstick
50g salted fish
200g rice
500ml water
1 tbsp chopped spring onion



Seasonings


1 tbsp soy sauce
1 tsp sugar
a dash of pepper
1 tsp sesame oil

Salted  fish

 

Chicken drumsticks


Marinate salted fish


Wash the salted fish and cut it into smaller pieces. Marinate with 2 tbsp oil, 1 tbsp minced ginger and 1 tsp sugar for 20 minutes



Marinate chicken drumsticks


Remove the bones from  the drumsticks and cut into smaller pieces. Marinate with 1 tbsp shallot juice,1 tbsp ginger juice,1 tbsp Hsao Hsing wine, 1/4 tsp salt, 1 tsp sugar, 1 tsp soy sauce, a dash of pepper and 1 tsp sesame oil for 15 minutes.


Instructions


1. Wash rice, drain and set aside. Add 1 tsp salt, 2 tbsp oil and mix well.
2. Place the rice in a clay-pot and add 500ml of water and cook over low heat for 10 minutes.
3. Sprinkle salted fish on top and cook for another 10 minutes.
4. Add chicken into the boiling rice and cook for  another 10 minutes.
5. Switch off the fire and let it be for another 10 minutes or until the surface of the cooked rice is no longer watery.
6. Stir in the seasonings and garnish with chopped spring onion.


Note: Always use low fire when using a clay-pot to cook as it burns easily.

Minced Pork Steamed With Salted Fish 咸鱼蒸猪肉


 Super yummy !

Ingredients

 
300g minced pork and fat
20g salted fish slices
5 chili padi
10g young ginger
1 egg


Sauce Ingredients


1 tsp cornstarch
1 tsp sugar
2 tsp water

Dissolve the cornstarch and sugar with the water


Instructions

 
1.  In a mixing bowl, beat the egg and mix it with the minced pork and fat
2.  Dissolve the cornstarch and sugar with 2 tsp of water and mix it together with item ( 1 ) above
3.  Put the mixture into a plate as shown in the picture below
4.  Slice open the chili padi and remove the seeds and chop them up
5.  Slice the ginger into thin slices
6.  Cut the salted fish into smaller pieces and place them on top of the pork mixture in the plate
7.  Sprinkle the cut chili padi and young ginger slices on top
8.  Steam in boiling water for 20 minutes

This is just to show how the salted fish pieces, chili padi and young ginger are placed on top of the minced pork mixture before steaming
