Chocolate Cake 巧克力蛋糕

Chocolate Cake 巧克力蛋糕

Recipe source :  Minnie

I got this recipe from my friend, Minnie years before blogs were started. She apparently got her supplies of great recipes for cakes and cookies from her aunt's cookbooks. And her aunt bought her collection of cookbooks overseas.

I have been making this chocolate cake ever since. Just a few easy steps to follow which is almost fuss-free baking and the ingredients required  are very basic. That's what I like best!

Do use good quality butter instead of margarine. It really makes a great difference.

This recipe is among the few trusted recipes that I hold dear to my heart.

Simply scrumptious!

Ingredients

10 eggs, separate the whites from the yolks
4 oz plain flour
4 oz self-raising flour
2 oz cocoa powder
12 oz castor sugar, divide into two portions
1 1/2 pieces butter ( 375g)

Method

1.  Sift the flour, self-raising flour and cocoa powder together.
2.  Use 6oz of the sugar and cream this with butter until light and creamy. Add egg yolks, one at a time and beat well after each addition. Remove.
3.  Whisk remainder half of sugar with egg whites until stiff.
4.  Fold in the two beaten mixture and add in the sifted flour.
5.  Pour batter into a greased 9 inches square tin.
6.  Bake in a preheated oven at 180 degree C for about 35 to 40 minutes. Insert a skewer into the cake. If it comes out clean, the cake is done.

Orange Marbled Chiffon

Orange Marbled Chiffon

Recipe source :  Amy Beh

This marbled chiffon cake is light and fluffy.

I like the citrus orange flavour combined with cocoa powder. It is very soft and nice.

Ingredients

5 large eggs, separated
135g castor sugar
1/4 tsp cream of tartar
1/4 tsp salt
65g corn oil
1/2 tsp vanilla essence
1 tbsp freshly squeezed orange juice
1 tbsp passion fruit pulp                    ( I used orange pulp)
Grated rind of 1 orange
95g self-raising flour                           ) sifted together
20g cornflour                                       ) twice
1 1/2 tbsp cocoa powder                  )
1 1/2 tbsp water                                 ) Mix into a paste

Method

1.  Place egg whites with half of the castor sugar and cream of tartar and whisk until stiff and hold its shape.
2.  Whisk egg yolks, remaining sugar, salt, orange juice, vanilla essence and corn oil until light and thick.
3.  Add sifted flour  and continue to whisk until well combined and smooth.
4.  Gently fold egg white mixture in 3 -4 batches into the egg yolk mixture.
5.  When evenly blended scoop out one ladle-full of batter and add cocoa paste and mix until well blended.
6.  To the remaining chiffon mixture, add orange rind and pulp. Fold into mixture.
7.  Pour half of orange batter into an un-greased 22 cm spring form chiffon tube pan.
8.  Spoon half of cocoa batter over the orange batter. Top with remaining orange batter.
9.  Add the remaining cocoa batter. Use a satay skewer to swirl the cocoa batter to form a marble design.
10. Bake in pre-heated oven at 180 degree C for 25 minutes or until done.
11.  Invert pan and allow cake to cool completely before easing it away from the sides of the pan with palette knife.

Oops, the top got slightly burnt!
But still the marble design was pretty

Cookies : Coconut Crisps 椰丝饼

Cookies :  Coconut Crisps 椰丝饼

Recipe source :  Y3K Magazine, Issue No. 40, 1/2 - 2008

Seems like all the cookies are disappearing before the Chinese New Year! I am getting frantic as there are so many more traditional types of cookies which I have bookmarked to try out yet I never seem to get round to making them and they just got postponed year after year! Sigh! Twenty four hours in a day is just not enough!

Now getting back to the assignment I have in mind today - coconut crisps. These are lovely. I just like the aroma of dessicated coconut baking in the oven. The fragrance of baking dessicated coconut so strongly permeating the air and wafting through my kitchen is a heavenly smell! Well, to me anyway! It took me back in time during my childhood as my siblings and I were anticipating sinking our teeth into the cookies baked by my late mother for the Chinese New Year. Gone were the days but happy memories remain.

Ingredients A

140g butter
120g Castor sugar

Ingredients B

3 egg yolks

Ingredients C

200g plain flour
1/2 tsp salt
1 tsp baking powder

Ingredients D

60g dessicated coconut

Ingredients E

10g cocoa powder

Method

1.  Cream ingredients A for 1 minute, add beaten egg yolks. Beat until well blended.
2.  Fold in Ingredients C. Then add ingredients D and mix everything into a dough.
3.  Take out one third of the dough and add cocoa powder to it. Mix evenly to form a cocoa dough.
4.  Combine both dough together and mix well. Divide into 15g each and roll into rounds. Flatten the rounds slightly and place onto lined baking trays.
5.  Bake at preheated oven at 150 degree C for 15 to 20 minutes or until golden.
6.  Cool and store in air-tight containers.

Coconut Candy ( 1 ) 椰子糖

Coconut Candy ( 1 ) 椰子糖

Sweet, sweet confection

Coconut candy was among the first few food items that I learnt to make as a teenager. Back in the day of my youth, there weren't that many snacks or sweet treats around in small towns. I first ate this candy at my friend's Deepavali open-house. Later, my friend, Sim made this old-fashioned coconut candy and I learnt it from her. There seemed to be a slight variation from what I ate at the Deepavali open-house with that made by my friend, Sim. Making and eating this candy again brought back the nostalgia of bygone years.

This sweet confection is laden with sugar but I think it is okay to indulge once in a while.

Ingredients

1 grated coconut, equivalent to about 2 cups tightly packed grated coconut
2 cups sugar
3/4 cup of evaporated milk
2 tbsp butter or margarine
1/2 tsp salt
1 1/2 tbsp cocoa powder

Instructions

1.  Pour the grated coconut into a wok and stir-fry for about 3 minutes.
2.  Add in the butter, sugar, salt and evaporated milk.
3.  Add in the cocoa powder.
4.  Continue to stir and cook until it is almost dry and caramelised.
5.  Dish up into a greased tray.
6.  Use a spoon to distribute the coconut evenly across the tray.
7.  Use a knife to cut into squares or rectangles but do not remove the pieces yet.
8.  Allow to cool down and hardened first before removing the squares or rectangles.
9.  Store in a container and keep it in the refrigerator.

My collection of cookie cutters

For the last batch of cookies,  I rolled up about 10g each of the dough and put them into tiny patty cases.
Then I sprinkle some chocolate rice mix on top.
If you are making the cookies like this, you've got to bake them for 20 minutes at 180 degrees centigrade

Store the cookies in an air-tight container
