Zucchini Fried With Pork Slices
Light, crunchy and a very refreshing dish
We first came across this dish when we were in Guilin and we just loved the crunchy zucchini. After returning to K.L. we decided to replicate it and here it is.
Ingredients
500g zucchini - cut into bite-sized pieces
150 g pork slices
4 tbsp cooking oil
1 tbsp minced garlic
Pork Marinade
2 tsp cornflour
1 tbsp Shao Hsing wine
Marinate for 30 minutes
Sauce Ingredients
1 tbsp oyster sauce
1 tsp abalone sauce
1 tsp salt
2 tsp sugar
Dissolve the sauce ingredients in 1 Chinese rice bowl of water
Cooking Instructions
1. In a wok, heat 2 tbsp of cooking oil until the wok starts giving out smoke.
2. Add in the zucchini and fry for 2 minutes. Dish up and set aside
3. Clean the wok, use medium flame to heat another 2 tbsp of cooking oil till hot
4. Add minced garlic and saute until light brown and fragrant
5. Add in the pork and fry until it turns whitish
6. Add in the sauce ingredients and another half Chinese rice bowl of water
7. Let it boil for 2 minutes and add in the fried zucchini
8. Let it simmer for another minute
9. Dish up and serve
